Quite Possibly The Worlds Easiest Cookies

Seriously, this is the simplest cookie recipe ever known to mankind. I mean, you don’t even need to bake them!

Thanks to a viral Marketing campaign, in England, we have a saying: “If Carlsberg did …….. they would be the best …….. in the world”. Well if Carlsberg did cookies, they would be these ones!

Alas, I cannot take the credit for this ingenious recipe… It belongs to the amazing Brown Eyed Baker. If you haven’t already, check out her website. It’s my go-to whenever I am looking for sweet treat inspirations.

I have been sick and tired of craving something sweet after dinner and having nothing at home that tickles my taste buds. Until now.

These no-bake cookies are peanutty, chocolaty, oaty goodness. And take all of about 5 minutes to make. And 20 to set… If you can wait that long. Even better, the ingredients used to concoct these edible delights are usually found lying around in kitchen cupboards. Perfect for late night cravings.

In a large saucepan melt 1 stick butter, 2 cups sugar, 1/2 cup milk and 4 tbsp cocoa powder over a medium heat.  Bring to the boil and simmer for 1 minute.  Take off the heat and stir in 1/2 cup peanut butter, 2 tsps vanilla extract and 3 cups of quick-cook oats.  Dollop onto a lined baking tray and press with back of a spoon to flatten.  Leave to set for about 20 minutes, then devour.

Now, please excuse me while I go back to collecting up the escaped oaty crumbs on my desk. Waste not, want not…
